The $5 million makeover

Troy Cannan, executive chef of the Eldorado Hotel Casino and co-owner of LuLou's Restaurant, finishes a pasta dish at the Italian station of The Buffet. Cannan ranks among the area's most admired chefs and will be cooking regularly at the buffet during its opening months.
"It was time for a new buffet," said Gregg Carano, corporate director of food and beverage for the Eldorado properties group. "Buffets have changed so much since the old one opened 13 years ago. Expectations are higher than ever. We want to get locals back downtown."
